Question #204

Do you have a good and EASY recipe for "Comfort Food" like "mom used to make" for our 80 yr. old Gumdrop?

Gumdrop - how about some chicken caccatoria? You can make a lot and have it as a left over if you want. It is really good the next day!

You need:

Chicken (I use breasts w/o bones)
Italian seasonings - in the spice row at the store
olive oil (or other oil)
garlic powder
some veggies - green pepper, onion, yellow squash, zuchini - whatever you like - all cut up in bite size pieces
Bottle of spaghetti sauce - whatever kind you like
Shredded cheese - I use mozzarella

Sprinkle seasoning & garlic on chicken & saute it in hot oil in frying pan until done. Drain on papertowel.
In same pan with same oil, cook veggies (add some more seasoning & garlic if you want), stirring a lot, until mostly done.
Pour in sphaghetti sauce and cook until bubbling.

Put chicken on plate and spoon sauce over, then put shredded cheese on the warm sauce.

Then eat it. This is really good and does not take more than 30 minutes to make. If you use sverral pieces of chicken, there will be left overs.

I make this alot at home, but there is never any left overs. Everyone here really likes it.

Okay .... this is how my Mom made Goulash ...

1 lb. Ground Beef
Diced onion to taste
Salt and Pepper
2 cans Campbell's Tomato Soup
1 box of Elbow Macaroni
1 can dark red Kidney beans
Paprika to taste

Cook ground beef with diced onions and salt and pepper.

While ground beef is cooking, boil water and cook macaroni according to package directions.

Drain ground beef well.
Drain Macaroni well.

Add ground beef mixture to the macaroni and stir in the 2 cans of soup and the kidney beans.

Mix all together. Add Paprika to taste. Sprinkle shredded cheese on the top when serving, if you want.

I guess it was the Paprika that made it Hungarian!!

LOL CinCin, that is the exact same recipe my Mom made for us.

My grandmother always made Chicken and Dumplings every Sunday. Yummmmmy. It must have been a secret recipe as I can't make them like she did.

My all time favorite comfort food is Macaroni and Cheese. I just found the Kraft's Easy Mac Cups and makes a cup in 3 1/2 minutes. Just add water and nuke and you have your own little cup of Mac and Cheese. Toss the cup and you have no dishes to wash.

Can't be any easier than that.

CIN YOUR GOULACH RECIPE SOUNDS THE
SAME AS OUR OLD ONE. DONT KNOW ABOUT THE PAPRIKA, I CAN REALLY SCREW UP WITH SPICES. [USUALLY I OVERDO THEM] BRONC I THINK I WILL GIVE YOUR CHICKEN A GO. LOTS OF SPICES FOR ME TO TRY BUT IT SURE
SOUNDS GOOD. PARTICULARLY HAVING
ENOUGH LEFT OVER FOR A COUPLE DAYS.
IF IT TURNS OUT GOOD I CAN DOUBLE
THE RECEIPE THE NEXT TIME.

Macaroni and Tomatoes

Easy ... cook some elbow macaroni, drain, dump in some canned diced tomatoes, black pepper, salt & garlic & olive oil.

Good Hot or Cold!

Here's one that I like for a bean soup:

One can of black beans
One can of pinto beans
One can of corn
One can of green beans
One can of Rotel tomatos
One medium onion, chopped to preference
One packet of powdered ranch dressing
One packet of powdered taco seasoning
Water to your preferences
1 pound of ground turkey

In a large pot brown and crumble the ground turkey and remove from the pot.
With a little oil, saute the onion.
Dump the cans of vegies in the pot, add some water and the browned turkey, and stir.
Add the packets of taco mix and ranch dressing, stir.
Simmer until everything looks like it's mixed and hot.
You can substitute diced tomatos if the Rotel is too spicy.
Like everything in the "comfort food" category, this is better the second day or after your freeze 1/2 for later.

My Mother In Law gave me this Recipe for Honey Lemon Chicken that my kids now request for their "Special Birthday Dinner" and I feel quilty because it's so easy.

6 pieces of chicken (wings,drumsticks,split breasts,etc)
2 oz of butter
Small onion, cut in 1/8ths
4oz of honey
2oz of lemon juice (I use the concentrate that comes in the bottle to save time)

Fry the the chicken in the butter until it's brown on Medium High heat. Reduce heat, sprinkle onions on top, cover and let simmer for 30-35 minutes. (Check occasionly...may need to add a tiny bit of water)

Mix the 4 oz of honey and the 2oz of lemon juice. SLOWLY pour over the chicken. Leave on for 15 or 20 minutes until it starts to thicken and the onions begin to carmelize. Baste frequently. Depending on the amount of chicken you use, may need to make more sauce. Enjoy!
