Okay!! Time for more recipes for Gumdrop!!

This time ... what is your fave Chicken Salad, Tuna Salad, or Egg Salad recipe??

What is you fave cool meal on a hot Summer day?

No meat on a hot day--fruit, salad, and LOTS of iced tea--no sugar!

Tuna salad:

In a medium bowl dump in a drained can of tuna.

Chop as many pickles as you like, and dump those in.

Finely, chop 1/4 of a medium onion, and dump that in too.

Add 1/2 of a diced granny smith apple.

Add a hand full of pecans or roasted amond slivers.

Stir in a tea-spoon of dijon mustard and "enough" mayonase.

Stir all this up and serve on bread, Romain lettuce leaves, crackers, or just eat from the bowl with a fork.

Please don't make comments on my serving style--Martha Stewart has already marked me off her favorites list!

Stuffed Tomatoes

Large ripe tomatoes
Couple slices crispy fried bacon crumbled - - try the precooked stuff at the store… it’s not too bad.
diced onion
diced celery
boiled egg chopped up
little mayo or miracle whip
Dash of vinegar (I prefer apple cinder)
Salt & black pepper to taste
Dash of Tabasco or hot sauce if desired

Slice tomatoes in half an spoon out center to leave a nice fleshy tomato bowl.

Combine tomato filling with remainder of ingredients, let sit and chill in refrigerator for an hour or so. Spoon into tomato bowls for serving.

Wonderful for a hot summer day!

GREEK SALAD -

Cut into chunks:
cucumber
red onion
tomato (seeded if you want)
olives - any and all types
red pepper (if desired)

ADD:
feta cheese to taste (get the crumbly kind, it is easier to add)

Mix in your favorite italian salad dressing.

This is great right away or the next day (lets the flavors meld together)

Also great to grill a chicken breast, let it cool, and cut it into chunks to add to the salad.

KNEW ALL OF THOSE GOODIES JUST GOT
MIXED IN WITH MIRACLE WHIP. THAT TOMATO DEAL SOUNDS TASTY. AWFUL LOT OF "TO DO" FOR ME THOUGH.
IS TOTSIE A 'DUMP TRUCK' DRIVER???
EVERYTHING JUST GOT "DUMPEDIN"

Howdy Gumdrop, you can also just chop up the tomatoe and make it a regular tomatoe salad instead of the 'fussy Martha' way....

I do this when I just don't feel like makeing them pretty. I also leave out the egg lots of times.

don't know any recipes but tell u a joke, when jarrod and i first got married he asked me to make tuna salad and i didn't know how so i scrambled eggs and mixed them with tuna. i didn't realize you were supposed to hard boil the egg. haha. my favorite summer meal is a snow cone!!!!!!

Egg Salad:

Hard Boil 6 eggs

Peel and chop the eggs

Stir in Miracle Whip to consistancy you like.

Slice pimento stuffed green olives into the egg mixture ... as many as you want ...

I also pour in some of the Olive juice from the bottle ...

Add Salt and Pepper to taste ... stir well.

Chill ...

Serve on bread or toast or crackers or in a tomato or on a bed of lettuce or eat straight from the bowl or on fritoes!
