No, I would never add horseradish to gravy (I'm assuming brown gravy here, for say, roast beef?). Add the horseradish as you serve-otherwise the horseradish might overpower for some. Now if we are talking biscuits and gravy i.e. white gravy-Gumdrop, shame on you! Never never never! More sausage, never horseradish.
Personally, I'd skip the gravy and just slather the horseradish on the slice of beef...yummm!

Wine fairie has it right - put the horseradish on the side and use it as you wish.
I would never ever add horseradish to gravy, however, I would add a some to my tuna salad mixture. It is fantastic in Tuna Salad.

You will want to add the horseradish to your tastes in the tuna salad. There is no hard and fast rule on the amount since it depends on the amount of tuna salad you are preparing and your personal pain threshold. However, if you are making a can of tuna into tuna salad, about 1/2 to 1 teaspoon should be enough.
Outback Steakhouse makes a good horseradish/butter sauce for their steaks ... I agree with most of the others ... keep horseradish on the side and add it as you prefer with each bite.
Tom also makes Tuna salad with horseradish ... chicken salad, too. Both are very yummy that way. Start with a little and add more if needed!
Also ... KRAFT make a Horseradish Sauce in a squeeze bottle which is great in tuna or chicken salad in place of mayo ... and also great on sandwiches ...
Redeye gravy with horseradish is good, but less is purdent.... it's like salt, you can always add more but you can't take it out once it is in there.
My favorite horseradish: horseradish cheese, corned beef, mustard on rye bread.... yum.
